Zubrsinthe was born against all odds. To show that Poland has had her final word and the idea of marrying absinthe with traditionally old-Polish bison grass is still alive an kicking. Since its premiere in 2009, when Boggy brought the bottle of Zubrsinthe for his friends gathered at the Boveresse absinthe festival, Zubrsinthe has a cult following.
Bison grass for Zubrsinthe is grown in the Biatowieza Primaeval Forest and is harvested only for that purpose. The grass that has been used exclusively for the colouration of the first batch of Zubrsinthe comes from 2011 harvest. The certain methods used in the distillation and colouration stages bring forth the strong wormwoodiness married with the finesse of bison grass the majority of genuine spirit connoisseurs knows very well from zubrowka, anise is here only to make it louche.
Zubrsinthe, although rooted in the best of Swiss absinthe traditions, is entirely modern absinthe for very sophisticated palates, being still the smoothest of all absinthes thanks to the techniques applied to accentuate the herbs not the alcohol. Many of the leading absinthe afficionados and distillers have become the ardent fans of Zubrsinthe.
Zubrsinthe is gentle and calm, yet fiery and passionate. Zubrsinthe is unique. Zubrsinthe was, is and will be one of the most original absinthes ever created.
